So how do you disable the EDGE Network from your phone? I found this nifty application called BossPrefs. To put it simply, it has a series of switches (onto which you may also add other services you want to have the power to toggle on or off). So if you want to turn off EDGE, you simply "flip" to the off position.
You can get BossPrefs by adding this link to your list of installer sources:

Then tap "Install", "Utilities", and install BossPrefs.
